Recipe: Fully Loaded Nachos

Lately I'm all about EASY recipes. That probably has something to do with the fact that I'm traveling 80% of the time so when I'm finally home for one weekend, I don't need to go do a full on grocery shopping trip.. I just need one simple meal for the weekend.

This recipe for fully loaded nachos is the bomb! I especially love it because you can add anything you want on it, the possibilities are endless. Shredded chicken or steak would be yummy for meat eaters.

All you need to do is put nachos in a baking pan and layer them with your toppings. I did cheese, salsa, and black beans. Then do a second layer of more chips, salsa, and black beans. Bake them in a 400 degree oven for about 20 min or when the cheese is all melted and everything looks just right.

Add sour cream and avocado on top and you're set!

Perfect for a date night in or snacking!
