Easy Recipe Alert: Crock Pot Salsa Taco Chicken

So I don't know about you, but every year when summer rolls around, I would much rather be out by the pool vs cooking and having the hot oven on all day. 

That's why I turn to my crock pot time and time again. 

I basically just made this up and threw everything together. I don't eat meat so I couldn't test it out but my husband swears it's amazing so I wanted to share with you all today!

Ingredients- 

Chicken breasts
1 can of- black beans, corn, green chilis, and hot salsa
1 package of shredded cheddar cheese
1 pack of taco seasoning 
Half a can of enchilada sauce 

Directions-


Put the chicken breasts on the bottom of your crock pot and dust with salt and pepper if you want. 


Dump everything on top of the chicken except the cheese. 


Pour cheese on top. 


Mix everything together, cover the crock pot, and cook on high for about 8 hours. 


After everything is all cooked the chicken should easily just pull apart with two forks. You want it all nice and shredded. 


I decided to make a side of Spanish rice and I grabbed some tortillas so my husband could make burritos with my crock pot goodness. It would be really good all on its own though, too. You can do a lot with this!

We have had an amazing two weeks down visiting my family and now today my sister is coming back up with us to Bakersfield for a week and I'm so excited. I have so many fun things planned for us to do and I thought it would be fun to share a daily adventure with you guys so that's what I have planned for the blog until next week on the 4th when we will be coming back down to bring Paige down south and spend the 4th and my moms birthday with my fam.
